Maison Dehesa demonstrates its excellence with these Cantabrian anchovies, which are unrivalled on the market. When most anchovies are floury, too salty and full of bones, Maison Dehesa reinvents them and offers anchovies of incredible taste and quality. Reasonably caught in the Gulf of Cantabria, the anchovies are prepared using traditional salting techniques and entirely traditional methods. The fish are selected one by one according to their size, washed, topped, stemmed and, in a unique way, the bones are removed with tweezers. Finally, the anchovies are matured for a record 12 to 24 months.
