It is a balsamic vinegar without added sugar or caramelization by carefully selecting a land and winemaker known for producing naturally "sweet" wines. Pepe, a sixth-generation winemaker in the Cordoba desert, aged this precious vinegar in century-old barrels, a living memory of Sherry wines from 1929. This limited edition vinegar follows the traditional Sherry aging process, using grapes from "albarizas" vineyards and an ancient sun-drying method to concentrate natural sugars. The meticulous "Criada" and "Solera" methods in century-old oak barrels result in a vinegar with controlled acidity below 6%, reminiscent of the sweetness of balsamic vinegars.
