Artisan cheese, 1608 is a unique cheese made exclusively from the milk of Canadian-bred cows from a single herd located in Charlevoix. It has a slightly moist pinkish rind and a smooth, creamy, and melt-in-the-mouth dark yellow paste. It gives off sweet smells of butter and nuts. On the taste, it is soft and complex, revealing flavors of butter, green apple and a nutty finish.
