Esparragos de Navarra are grown in the Ebro Valley, and are a seasonal produce that is only harvested from March to June. Not only that, it takes about two years from first planting to first harvest, which makes this a rare treat. So rare, indeed, that they’re marked with a protected denomination of origin seal. This means that the entire production process is supervised, ensuring quality and control. And it also means that only asparagus with that seal are worthy of the name “Esparragos de Navarra”!
